My sister who's a writer has decided to help me write a cook book, For those who do not know i've been cooking gourmet for years, anyway i was thinking, Sense so many of the people here are from outside the USA, Maybe it be fun to have anyone " Who Want's Too" give me a recipe, I'll make this recipe and if it's good we'll add it to the book, also i'll give full credit to the people who send me the idea's...

I want to do a section from, "My friends around the world.".....

I'll be posting some of my own here for anyone who wants to try and make these's meal's.....

This post will also be on our sister's site's for anyone who needs more idea's..

Italian Wine Cookies

1 C. wine, red or white
3/4 C. sugar
3/4 C. oil
1 t. anise seed
1/4 t. salt
1/2 orange rind
2 t. baking powder
1 egg
4-1/2 C. flour

Mix first 8 ingredients, and then add flour. Knead on board. Roll into shape (a roll about 6" long and 1/2-3/4" thick. Then make a loop and put one end through. Pretzel shape is OK.) Sprinkle with additional granulated sugar. Let dough sit 20 minutes to rise. Preheat oven to 350 degrees F. Bake for 15-20 minutes.

Vegetable Minestrone soup

4 to 5 cloves of garlic minced

3 tablespoon's of olive oil

2 can's of vegtable broth.[ 14oz can's}

2/3 cup's of small shell pasta

3 can's of tomatoes diced with, basil, garlic and oregano

2 cup's of zucchini

one can each, Navy bean's, Chick Pea's, Great Northern bean's rinse bean's before you add..

one cup of chopped freash herb's..

In a large saucepan, cook the garlic in oil until sift but not burned, add the broth and pasta, bring to a boil, reduce the heat to a medium -low and cover for about 5 to 8 minute's,

Then stir in the tomotoes and zucchini: cover and cook for 10 more minute's,
After 10 minute's add the bean's and herb's, heat until all are tender, about 20 minute's....

while soup is cooking shredded 1/2 cup of Parmesan cheese's to serve on top...

This meal goes will with crusty Ilalian bread and a light salad..

Here's another one for you FI...

Butternut Squash, Sage and Blue Cheese Gratin

1 butternut squash (about 1 3/4 lb.)
1 tablespoon olive oil
1 tablespoon chopped fresh sage
1/4 teaspoon kosher (coarse) salt
1/4 teaspoon freshly ground pepper
3/4 cup (3 oz.) crumbled blue cheese
1/4 cup (1 oz.) shredded Gruyère cheese
1. Heat oven to 375°F. Spray 11x7 1/2-inch baking dish with nonstick cooking spray.
2. Cut squash in half lengthwise; remove seeds and peel. Slice each half crosswise into 1/2-inch-thick slices. Place squash in single layer at 45-degree angle in baking dish. (The squash will be tightly packed.)
3. Drizzle squash with oil. Sprinkle with sage, salt and pepper. Cover with foil.
4. Bake 40 minutes or until squash is tender. Remove from oven; remove foil. Sprinkle with blue cheese and Gruyère cheese. Return to oven; bake an additional 1 minute or until cheese is melted.

Chocolate Berry Cobbler


COBBLER
2 cups fresh blueberries
2 cups fresh raspberries
2 cups sliced fresh strawberries
1 1/4 cups plus 1 tablespoon sugar, divided
1 cup plus 2 tablespoons all-purpose flour, divided
1/4 cup unsweetened Dutch-processed cocoa
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup unsalted butter, chilled, cut up
1/3 cup buttermilk
1 egg
TOPPING
1/2 cup whipping cream
1 tablespoon sugar
1. Heat oven to 425°F. Spray 9-inch square baking pan with nonstick cooking spray. In large bowl, combine blueberries, raspberries, strawberries, 1/2 cup of the sugar and 2 tablespoons of the flour; mix gently. Spoon into pan.
2. In medium bowl, stir together 3/4 cup of the sugar, remaining 1 cup flour, cocoa, baking soda and salt. With pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs. In small bowl, whisk together buttermilk and egg. Stir into flour mixture until well-blended.
3. Drop dough by spoonfuls over berry mixture; sprinkle with remaining 1 tablespoon sugar. Bake 25 to 35 minutes or until fruit is bubbly and cobbler is set. (Top surface should be dull and dry to the touch.)
4. Meanwhile, in another small bowl, whip cream with 1 tablespoon sugar until soft peaks form. Cover and refrigerate. Serve warm cobbler with whipped cream.

Wild Mushroom-Potato Gratin

1 oz. dried porcini or shiitake mushrooms (about 1 cup)
1 tablespoon butter
2 large garlic cloves, minced
2 cups whipping cream
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 lb. Yukon Gold potatoes (about 5 medium), peeled, thinly sliced (1/4 inch)
1/4 cup (1 oz.) shredded Asiago cheese

1. Place mushrooms in small bowl; cover with hot water. Let stand 20 to 30 minutes or until softened. Drain, reserving 1/4 cup mushroom liquid. Rinse mushrooms under water to remove any sediment. If using shiitakes, remove and discard stems. Slice mushrooms.

2. Heat oven to 400°F. Spray 6-cup gratin or 8x8-inch baking dish with nonstick cooking spray. In large saucepan, melt butter over medium heat. Add garlic; cook 30 to 40 seconds or until fragrant. Stir in mushrooms, cream, 1/4 cup reserved mushroom liquid, salt and pepper. Add potatoes. Bring to a boil, stirring occasionally. Reduce heat to low; simmer 5 minutes.

3. Carefully spoon mixture into gratin dish. (Recipe can be made to this point up to 24 hours ahead. Cover and refrigerate. Baking time may need to be increased 5 to 10 minutes.) Sprinkle with cheese. Bake 30 to 35 minutes or until potatoes are tender and sauce has thickened. Let stand 10 minutes.

It's best if you use a mix of different mushroom's and cut to size.....

Cooking Tip..

Never wash mashroom's they are like a spong just take a damp cloth and clean the top's and side's.....

Three-Potato Soup...

2 tablespoons vegetable oil
2 medium leeks, white and light green parts, chopped
1 medium onion, halved, sliced
6 cups reduced-sodium chicken or vegetable broth
1/2 lb. russet potatoes, peeled, sliced
1/2 lb. Yukon Gold potatoes, peeled, sliced
1 lb. sweet potatoes or yams, peeled, sliced
1/2 cup milk
1/4 teaspoon white pepper
1. Heat oil in Dutch oven over medium heat until hot. Add leeks and onion; cook 3 to 4 minutes. Add broth and russet potatoes, Yukon Gold potatoes and sweet potatoes; bring to a boil. Reduce heat to low; simmer, partially covered, 30 to 40 minutes or until tender.
2. Remove from heat; cool slightly. Puree in blender or food processor (be careful when blending hot liquids); return to Dutch oven. Stir in milk and pepper. Heat gently over low heat just until hot.

Spicy Tomato Penne....


1 lb. penne (tube-shaped pasta) or ziti
1/4 cup olive oil
5 medium garlic cloves
4 dried red chiles or 1 teaspoon cayenne pepper
3 slices thick-sliced bacon, cut into 1/2-inch strips
1 (14.5-oz.) can diced tomatoes, undrained
6 tablespoons (1 1/2 oz.) shredded Pecorino Romano cheese
2 tablespoons minced fresh Italian parsley

1. Cook penne in large pot of boiling salted water 9 to 11 minutes or until al dente; drain.

2. Meanwhile, heat oil in large skillet over medium heat until hot. Add garlic and chiles;* cook 2 to 4 minutes or until golden brown, watching carefully so they don’t burn. Remove and discard garlic and chiles.

3. Add bacon to pan; cook 5 minutes or until cooked but not browned and crisp. Add tomatoes. Bring to a boil; boil 1 to 2 minutes or until hot, mashing tomatoes with potato masher until sauce is blended and almost smooth.

4. Add drained penne to pan. Increase heat to medium-high; stir until blended. Place in serving bowl; sprinkle with cheese and parsley.
