Gunner's Chicken Curry

1/2 cup butter 1 1/4 tsp salt
2 onions chopped 2 TBsp curry powder
2 or 3 cloves of garlic chopped 1 Tbspn turmeric powder
2 bay leaves 6 medium tomatoes peeled and quartered
1/2 tsp cloves crushed or 3 whole
1 inch piece of cinnamon stick
1 roasting chicken cut up


Melt butter in heavy Dutch oven. Add bay leave, cloves, and cinnamon stick, followed by onions and garlic. Cook over moderate heat until onions turn limp. Then add tomatoes and fry until the juice stops oozing out. Then add chicken, curry powder, turmeric powder and salt. Mix it thoroughly and cook for 5 minutes with the lid on. Then add 1 cup of chicken broth, cover and let simmer for approximately 45 minutes. Serve over rice or cook rice in with the curry. I use minute rice and it soaks in the flavor.
